- 1 diced onion
- 1 crushed garlic clove
- 2 sliced carrots
- 2 sliced celery stalks
- 3 cups chopped fresh spinach
- 1 big can diced or stewed tomatoes (del Monte is the best)
- Half cup brown rice
- 1 cup rinsed lentils, vegetable broth, grated pecorino cheese
Sautee onion, garlic, carrots, celery in olive oil until onions transparent. Add spinach and sautee few minutes until wilted. Add tomatoes, rice, lentils, and broth. Simmer for about 30-45 minutes or until rice is soft. Top with cheese & enjoy!
