This is a really simple and quick dish.

  • fresh tomatoes (cherry tomatoes work best)
  • garlic, finely chopped
  • dried red chillies – optional

If using regular tomatoes, dice them. If using cherry tomatoes, slice in half. saute garlic in generous amounts of olive oil until it begins to brown. Add tomatoes; if using cherry tomatoes, place them face down (I usually make sure that each piece of tomato is over a piece of garlic) . Add dried chillies. Saute until the tomatoes are soft, usually about 5 to 10 minutes. Add the pasta to the pan for a couple of minutes and mix it in with the tomatoes and oil. Parmesan cheese and a nice Chianti go well with this.
